These protein packed chocolate balls made with quinoa are a new favorite in our house. Quick to make and the girls can help too. We have made them many times for breakfast and even to freeze and take with us on a trip.
You can add them to your favorite nut milk, with fruit, nuts and berries for a great cereal replacement. Even better decorate your next dessert with them and put on top a vegan cheesecake or cover in chocolate. This was Franki’s birthday party special treat and yes it was gluten free and vegan.
The main ingredient are the toasted quinoa flakes from I Heart Keenwah. You can find
them at Whole Foods and you will love them. I have successfully been able to replace for oats in many recipes.
- 1 Cup of Toasted Quinoa Flakes
- 1/2 Cup Raw Coconut Flakes
- 1 Heaping Tbs of Cacao
- Pinch of Himalayan Salt
- 9 Pitted Dates
- 1/2 Tsp Vanilla
- 2 Tbs Warm Water (if needed)
Pulse the quinoa flakes, coconut, cacao and salt in a high powered food processor or Vitamix until a crumb forms. Add dates and vanilla and continue to process until a dough forms. Add water if needed.
Spoon into a bowl, wet your hands and roll in to small balls. Refrigerate for 15 minutes.
Then serve in milk or dip in melted chocolate.
