I almost didn't do this Challenge. My Hubby said "What is it going to hurt". He has been on this roller coaster ride with me as we have had Dr. telling me that I'm fine to tests being messed up and wanting to be redone.
This Challenge was hard at the beginning. When I looked at the menu, I was not sure I could do it. I looked at all the Water I needed to drink, the Food and that the Snacks were Healthy. NO Junk Food or Sweets. I realized that I can go without them. Yesterday I was able to walk away from some gluten free cupcakes. Before I would have had no will power. I want to give a big Thank You to Tiffany and all of the others in the Challenge for their encouragement and recipe ideas. And I can't forget my Hubby for making sure I did not give up. Every day is a Blessing and Adventure.
This is what happens when you join a 14 month 'Clean Eating Healing Your Gut Program' with GF Mom Certified. I bought all my food for the week for $80.78 and this amount included the lovely potted flower plant you see in the background of this picture, parchment paper and a 4 pack of mason jars ... so, actual food cost was probably about $62. If I sent to the salad bar at work, not only would it not be organic, which I prefer, but I would have purchased a salad for $10-12. With this program, I'm preparing three meals and two snacks per day for close to the same amount. 5 meals vs. 15 and 10 snacks... grocery lists and meal plans provided for non-vegan and vegan.... hmmmm.... why didn't I do this sooner ?!?!

Good morning everyone! Here's breakfast from our beautiful 5th day challenge. I have to thank my daughter Veronica for pushing me to change my eating habits and giving me countless advise and books on healthy eating. She inspired me to start all this. I saw how her physical ailments are controlled now. Tiffany, thank you so much for all of this. I started weighing myself on Monday and since then I've lost 8 pounds! I had to weigh myself twice this morning because I couldn't believe what I was seeing! I am diabetic along with so many other medical conditions and I haven't seen my blood sugar below 106 for years. My lowest this week was 88! I am continuing with the 14 month program. I have totally changed my way of thinking about food. So, let's continue this wonderful ride together! To Health!
