I almost didn't do this Challenge.  My Hubby said "What is it going to hurt". He has been on this roller coaster ride with me as we have had Dr. telling me that I'm fine to tests being messed up and wanting to be redone.
This Challenge was hard at the beginning. When I looked at the menu, I was not sure I could do it. I looked at all the Water I needed to drink, the Food and that the Snacks were Healthy. NO Junk Food or Sweets. I realized that I can go without them. Yesterday I was able to walk away from some gluten free cupcakes. Before I would have had no will power. I want to give a big Thank You to Tiffany and all of the others in the Challenge for their encouragement and recipe ideas. And I can't forget my Hubby for making sure I did not give up. Every day is a Blessing and Adventure.

This is what happens when you join a 14 month 'Clean Eating Healing Your Gut Program' with GF Mom Certified. I bought all my food for the week for $80.78 and this amount included the lovely potted flower plant you see in the background of this picture, parchment paper and a 4 pack of mason jars ... so, actual food cost was probably about $62. If I sent to the salad bar at work, not only would it not be organic, which I prefer, but I would have purchased a salad for $10-12. With this program, I'm preparing three meals and two snacks per day for close to the same amount. 5 meals vs. 15 and 10 snacks... grocery lists and meal plans provided for non-vegan and vegan.... hmmmm.... why didn't I do this sooner ?!?!

Good morning everyone! Here's breakfast from our beautiful 5th day challenge. I have to thank my daughter Veronica for pushing me to change my eating habits and giving me countless advise and books on healthy eating. She inspired me to start all this. I saw how her physical ailments are controlled now. Tiffany, thank you so much for all of this. I started weighing myself on Monday and since then I've lost 8 pounds! I had to weigh myself twice this morning because I couldn't believe what I was seeing! I am diabetic along with so many other medical conditions and I haven't seen my blood sugar below 106 for years. My lowest this week was 88! I am continuing with the 14 month program. I have totally changed my way of thinking about food. So, let's continue this wonderful ride together! To Health!

Kid Approved

“This is not just a cookbook, Kid Approved is a solution guide for you to keep your child safe in a world of fun and wonder.”Right away, loved it! This describes the book perfectly. We are all so focused on what foods to avoid, what not to do when we have food allergies but Tiffany hits the nail on the head- food allergies are not about being afraid of your foods, it’s about finding out how to use the foods that you are able to eat. … That is what it’s all about and Tiffany shares that with us. I highly recommend this book to anyone that is looking for a gluten free, family-friendly cookbook. It also includes a shopping list, menus and a surprise extra at the end of the book (yeah, like I would ruin the surprise and tell you what it is!) - Tracy Bush, Nutrimom

Celebrates Heritage

“Overall, my family and I loved our meal from Celebrates Heritage. This book is not only a great resource for families with food allergies, but is a great resource FROM a family with food allergies, which makes it even better. Whether you are a family who is new to allergy-friendly cooking, or an old pro, this is definitely a book you should have in your collection.” - Kathleen Shannon, Soul Food Heals

Three Days To Perfection

Food is the social lubricant and it’s one of the smell of savoury foods that triggers good memories and author Tiffany Hinton really brings that idea to the forefront with one sentence that caught my eye“It will become your secret weapon to pull out…for those special people in your life that make you want to smile as soon as they walk in the room.”That’s what baking should really be about: memories. - Jordan Middlebrook, King Gluten Free

Celebrates Heritage

Y’all, this cookbook is way more than a cookbook! Tiffany inspires readers with not only easy-to-follow recipes, but also by the way she poured her heart and soul into this book by sharing her story and the struggles that brought her to where she is today. I was truly inspired and after reading it from cover to cover, I felt like I had known her forever. In the beginning, I instantly noticed that Tiffany had a soul food section in this cookbook and my first thought as a native Southerner was, “What does this girl from Chicago know about cooking soul food?” It turns out that she actually knows a lot about it! … The Mom Celebrates Heritage Gluten Free cookbook is a great addition to any gf family’s collection! I can see why it is a best seller! I can’t wait to try more recipes from this and other gf cookbooks by Tiffany Hinton, GF Mom Certified. - Belinda Eldred, GFree Genius

It’s not just a cookbook for making easy substitutions, but one with guides and tutorials that can help even the most stressed parents create easy and family-friendly meals that will transform the way they view allergy cooking!….Overall, I’m so impressed with Tiffany’s new book. Not only is it absolutely gorgeous and filled with fantastic recipes, but it’s such a great resource for parents, or anyone else, dealing with the complications and frustrations that go along with cooking allergy-friendly. Definitely check it out!” “…she has turned her experience into a business dedicated to helping others. The food allergy community is filled with people who want to take their struggles and learning experiences and use those to help others like them.
